Don't throw away your banana peels! They are your secret ingredient in this recipe.

Ingredients
- 6 banana peels (brown ones are fine)
- 1/2 cup water
- 4 eggs
- 2 cups sugar
- 3 cups flour
- 75 g butter
- 2 tablespoons baking powder
- Optional: 1/2 cup chocolate chips & pecan nuts



Instructions
- Preheat oven to 190°C
- Grease a 20cm cake tin
- Put the banana peels and the water into a blender or food processor. Blend until they turn into a smooth, dark brown, aromatic mush. Set aside.
- Beat the butter, egg yolks, and sugar in a mixing bowl until it is all combined
- Add the banana peels, the flour, and the baking powder, and mix well (optional: add chocolate chips / nuts).
- Whisk the egg whites until frothy, and gently add into the mixture (keep it fluffy)
- Pour into a cake pan. Bake for 45 minutes.
