Foodie Recipe: Zero Waste Banana Peel Bread

Don't throw away your banana peels! They are your secret ingredient in this recipe.

  • 6 banana peels (brown ones are fine)
  • 1/2 cup water
  • 4 eggs
  • 2 cups sugar
  • 3 cups flour
  • 75 g butter
  • 2 tablespoons baking powder
  • Optional: 1/2 cup chocolate chips & pecan nuts

  1. Preheat oven to 190°C
  2. Grease a 20cm cake tin
  3. Put the banana peels and the water into a blender or food processor. Blend until they turn into a smooth, dark brown, aromatic mush. Set aside.
  4. Beat the butter, egg yolks, and sugar in a mixing bowl until it is all combined
  5. Add the banana peels, the flour, and the baking powder, and mix well (optional: add chocolate chips / nuts).
  6. Whisk the egg whites until frothy, and gently add into the mixture (keep it fluffy)
  7. Pour into a cake pan. Bake for 45 minutes.
  8. Enjoy!
